
In 2015 I visited Duck and Waffle to check out their cocktail list. Mind Your Peas and Qs is a humble gin and tonic elevated by using pea-infused gin and fresh mint which creates a beautiful aroma.
It was created by celebrated bartender, Rich Woods who has since moved in to Scout, London. He has a brilliant cocktail book, where this drink is featured.

How to make the Pea-infused gin
Ingredients
700ml gin (I used Plymouth gin)
225g Sugar snap peas, snapped to release their flavour
10g fresh mint leaves.
Method
Pour the gin into a glass container with a lid. Add peas and the mint. Secure the lid and place in the fridge for at least 24 hours.
Once infused, strain through a muslin-lined strainer or coffee filter.
Decant into a glass bottle and reserve in the fridge. The infusion will last up to two weeks.

To make the ‘Mind Your Peas and Qs’ Cocktail
Ingredients
50ml Pea-Infused gin
75ml Fever-Tree Mediterranean
Large sprig of mint
To make add the Pea-infused Gin to high ball glass, add ice and tonic water and garnish with mint.
Rich recommends to serve without a straw so you can fully appreciate the aromas.
