Australian cherries signify summer for me and this cocktail is both pleasing on the eye and delicious on the tongue, delivering a sweet and sour punch that is lovely.
Ingredients for the Cherry Pop Cocktail
60ml Gin (I used No.3 London Dry Gin)
30ml freshly squeezed lemon juice
15ml simple syrup
3 pitted cherries (reserve one for garnish)
Muddle the cherries in the bottom of a shaker with the simple syrup. Add all the other ingredients and shake with ice. Strain into a chilled rocked glass filled with crushed ice.
