Serving pitchers of cool, refreshing cocktails is an easy way to impress friends who’ve popped over for a lazy Sunday afternoon. This Gin and Tarragon lemonade (via Bon Appetit) is very quick to put together and looks so pretty! The slight anise from the tarragon balances out the sweetness from the elderflower liqueur and tartness of the lemon really well.

Ingredients for Gin and Tarragon Lemonade (Makes 6)
10 large sprigs tarragon
2 lemons, thinly sliced
2 tablespoons sugar
175ml gin
175ml cup St-Germain (elderflower liqueur)*
75ml fresh lemon juice
350ml club soda
*If you want a lower alcohol version you could use elderflower cordial, but remember to reduce the amount of sugar.

Method
Put the tarragon sprigs, sliced lemons and sugar into a large jug and muddle together. Go steady! You want to muddle enough to release the favours of the tarragon but not hammer it to death.
Add the gin, St.Germain and fresh lemon juice and club soda to the jug and combine together. Add ice and stir to cool.
Serve over ice with a sprig of tarragon and a slice of lemon. Enjoy!
