Melbourne winters are just downright mean. This winter I’m tackling hot gin cocktails and this Spiced Cider and Gin Toddy is a good way to combat those chilly nights!
Spices are a personal preference. I’d probably reduce the amount of mixed spice next time and add a little ginger for some extra heat.
Ingredients for Spiced Cider and Gin Toddy (makes 2 drinks)
700ml Cider
250ml Cloudy Apple Juice
60ml Gin (I used Whitley Neill)
1 cinnamon stick
2cm x 6cm piece of orange peel with white pith removed
1 vanilla bean split lengthwise
1/4 tsp of ground nutmeg
1/8 tsp allspice
pinch of ground clove
Method
Add cider, apple juice and all the spices to a pan and simmer together for an hour. Do not allow to boil.
Reducing down the cider creates a syrupy liquid that doesn’t need sweetening, however, the original recipe does suggest adding some maple syrup, so it’s up to you.
Strain the cider through a cloth to remove all the solid ingredients. Add a 30ml of gin to each serving cup and pour the warm spiced cider on top. Garnish with a cinnamon stick or some orange peel.
