The West Winds Gin (Sabre) was my first introduction to Aussie gin, not long after we arrived in 2011, which funnily enough, was the year of it’s creation!
That same year both gins were entered into the The San Francisco Spirit Awards where The Sabre won Gold and the Cutlass won Double Gold. (A success repeated in 2013 with Double Gold and Silver medals).
These gins are definitely Australian originals featuring native botanicals like wattle seed and bush tomato and are cut with fresh Margaret River water from Western Australia.
Juniper and citrus feature strongly in The Sabre, but it does have a slightly floral finish. Garnish with with capsicum, watermelon or any citrus fruit in your G&T.
The Cutlass is warm, peppery and slightly spicy. The warmth comes from the cinnamon myrtle and the fact that it’s 52% ABV! It makes an robust martini, but also does well with tonic.
One of my favourite West Winds Gin Cocktails is this take on the gimlet.
