The Gin-ger-cillin Cocktail

On my recent visit to Thomas Olive, I spent some time grilling the bartender, Alan. I asked about how cocktails evolve (usually from the classics), creating cocktails for competitions (Alan was competing in a Bombay Sapphire competition for Project Botanicals) and the desire for bartenders to create their own ‘signature’ cocktail.

We talked about modern-day bartending legends, including Sam Ross, one of Australia’s finest, who created The Penicillin Cocktail. Alan was all set to make me one when I reminded him I’m a gin-only customer.

Pausing for a moment, he said “I reckon we could make a version¬†with gin” before grabbing a bottle of Botanist (in place of the blended whisky) and Bols Genever in place of the malt. And so The Gin-ger-cillin Cocktail was born. An homage to gin, ginger and Alan’s magnificent ginger beard.

Ingredients for the Gin-ger-cillin Cocktail

30ml Botanist Gin

30ml Bols Genever

20ml Ginger Syrup

20ml freshly squeezed lemon juice

Shake all ingredients together in an ice-filled shaker until very cold. Strain into a chilled glass and garnish with an orange twist. Enjoy!
