A Tom Collins is aclassic cocktail created by legendary bartender Jerry Thomas. A blend of gin, lemon juice, sugar syrup and soda water, it’s a refreshing long drink that makes a delicious alternative to a gin and tonic. In this version cucumber is muddled with the other ingredients to make a Cucumber Collins!
Ingredients for a Cucumber Collins
30ml Hendrick’s Gin
30ml lemon juice
15 ml sugar syrup (combine 1:1 ratio of sugar to boiling water)
3 cucumber slices (I like to squeeze a few drops out of of the juice)
Soda water
Method
Combine gin, sugar syrup, cucumber slices and lemon juice into a cocktail shaker and shake for a few seconds. Strain into a tall Collins glass over crushed ice. Top with soda water.
