Cherry Pop Cocktail

One of my best Christmas gifts this year (and Santa was VERY generous) was the PDT cocktail book, the same book I had on my gift guide.

Part of my plans for The Gin Queen this year, include trying out the gin cocktails from this iconic bar.

First up, The Cherry Pop. Essentially a sour (created by Jane Danger) the cocktail uses a combination of fresh cherries and cherry liqueur.

Australian cherries signify summer for me and this cocktail is both pleasing on the eye and delicious on the tongue, delivering a sweet and sour punch that is lovely.

Ingredients for the Cherry Pop Cocktail

60ml Gin (I used No.3 London Dry Gin)

30ml freshly squeezed lemon juice

15ml Luxardo Maraschino liqueur

15ml simple syrup

3 pitted cherries (reserve one for garnish)

Muddle the cherries in the bottom of a shaker with the simple syrup. Add all the other ingredients and shake with ice. Strain into a chilled rocked glass filled with crushed ice.
