A few readers have asked for gin cocktail recipes that can be created without the need for several costly ingredients. The Bee’s Knees Cocktail is just that! A simple classic that has only 3 readily available ingredients; gin, honey and lemon juice.
There are lots of Bee’s Knees recipes available, some require honey syrup (heat 1:1 water and honey together until smooth and leave to cool) which can be a faff when you need a cocktail NOW! I chose this recipe from Epicurious, because you just whisk the honey and hot water together, and I love the addition of lavender. I found dried lavender flowers at my local health food shop, but if you can’t get hold of any, it’s fine without!
Ingredients for a Bee’s Knees Cocktail (serves 1)
30ml boiling water
1/2 tsp dried lavender
30ml honey (I used Melbourne City Rooftop Honey, because I love what they do and it tastes so good!)
60ml Sipsmith Gin
20ml freshly squeezed lemon juice
Method
Steep the lavender flowers in the boiling water for 5 mins. Whisk in the honey until completely mixed together and strain into a bowl.
Add 30ml of the honey syrup to a cocktail shaker filled with ice together with the Sipsmith Gin and freshly squeezed lemon juice.
Shake well and strain into a chilled glass. Enjoy!

Oh this sounds fabulous!!! Love the lavender addition, prob could use a lavender tea if could get the dried lavender… Maybe. Nice one? x
